How do I set this up?
Also how many email addresses do I get with this? Would it be better for me to just buy the " Email Hosting" package?

Google apps is amazing, and free. Unless you have a very specific use to pay for email hosting on your web server rather than having google host it for free I would recommend going with google.
With Google apps you can have up to 100 users (each user will get his or her own email address and login credentials), but you can request for more with a good reason. But you can also have unlimited email lists and aliases which forward email to certain users so in reality you can have unlimited email addresses.
You can read more about google apps here: http://www.google.com/a/

I'm not sure if you select "use google" when signing up for your website automatically sets it up or not, to check you can try to go to http://www.google.co...yourdomain.com/ and see if you get a login page. If it isn't already set up try this:
After you have your web hosting all set up go over to this page, and follow the instructions. Google will ask you to upload a file to your website, among some other things, and you might have to mess with your domain settings (google will tell you what to do), but then it should be all set up.
